As a young girl, I watched our mom cook for our family 5-6 times a week. No matter how tired she was there was always food for us and others. She slowly began to share her cooking skills and that is where my love for it began. My sister and I helped our mom prepare feasts for our extended family because she loved to entertain and enjoyed having family around. That was also our mom's way of keeping us together because family was very important to her, and she never turned anyone away. She not only taught us how to cook, but she also taught us about morals and family value. Her love, memories, and teachings live on.
One might think that my career path would have been in the food service industry since I enjoyed it so much. On the contrary, I received a B.S. degree in Telecommunications Engineering Technology and joined the Army afterwards to later earn a M.S in Information Technology Management after being deployed to Iraq during OIF I. Once my military career ended, I followed the path I thought was right but, it did not feel right. Soon, I was diagnosed with severe PTSD and not understanding or knowing what was happening to me was frightening. Part of what our mom taught us actually became therapeutic for me over the years. Eventually, I started back cooking and baking which became my sense of peace.
A couple years later our daughter Ashley was born. She suffered a lifelong physical limitation due to an injury of the Brachial Plexus endured during delivery. This too was frightening. I needed more peace and comfort than ever before because I did not know how to handle this new injury Ashley suffered. So, I began baking more in between doctor visits and therapy appointments while family and close friends became huge fans of my desserts. Once our daughter was able to start preschool, I went to culinary school to sharpen my skills. I continued to bake and began providing healthy meal prep for athletes and this is how FIThymes Grill came about.
Ashley has a brother now and they both help me when I cook and bake for our family. In fact, they both help out on the food truck at times. Ashley is usually the cashier and Josiah may hand out a drink. My goal is to instill morals and values in them as our mom did my sister and me while showing them how to be successful individuals. FIThymes Grill is more than just a food truck, it is a peace of mind that aims to fit any appetite.
This business is dedicated to our mom because she always said that she will help me cook when I get my restaurant. I know she is with us in spirit. Rest Peacefully Mom aka Granny. We Love You,
